Smothered Chicken Breasts is a rich, comforting one-skillet meal featuring tender pan-seared chicken topped with crispy bacon, sweet caramelized onions, and melted cheese. It’s quick to prepare, full of flavor, and perfect for busy weeknights or family dinners.
Ingredients
- 4 boneless, skinless chicken breasts (6 oz each)
- 1/4 tsp salt
- 1/4 tsp lemon pepper seasoning
- 1 tbsp vegetable oil
- 8 strips bacon
- 1 onion, thinly sliced
- 1/4 cup packed brown sugar
- 1/2 cup shredded Colby-Monterey Jack cheese
Instructions
1. Season the Chicken
Sprinkle chicken breasts evenly with salt and lemon pepper seasoning on both sides.
2. Cook the Chicken
Heat vegetable oil in a large skillet over medium heat.
Cook chicken for 13–15 minutes, turning occasionally, until fully cooked (internal temperature 165°F / 74°C).
Remove from skillet and keep warm.
3. Cook the Bacon
In the same skillet, cook bacon over medium-high heat until crispy, about 10 minutes.
Drain on paper towels and reserve about 2 tablespoons of bacon drippings.
4. Caramelize the Onions
Add sliced onions and brown sugar to the reserved drippings.
Cook for about 5 minutes, stirring often, until onions are golden and soft.
5. Assemble the Dish
Place two strips of bacon on each chicken breast.
Top with caramelized onions and sprinkle generously with shredded cheese.
6. Melt and Serve
Let sit in the warm skillet until the cheese melts. Serve hot.
